Aka chocolate overdose. Can’t think of a better way of spending a rainy Sunday afternoon.
Double Chocolate Cookies
Recipe kindly provided by the Hummingbird Bakery, good for 12 big and pretty cookies.
- 50 g butter
- 450 g chopped dark chocolate
- 2 eggs
- 170 g soft brown sugar
- 1/2 tsp vanilla extract
- 85 g flour
- 1/2 tsp baking powder
- pinch of NaCl
Preheat the oven to 150 °C fan.
Melt the butter and half the chocolate over a pan of simmering water until smooth.
Beat sugar, eggs and vanilla until well mixed. Pour in the melted chocolate and butter, and combine beating at low speed.
Stir in the sifted mixture of flour, salt and baking powder in three additions, and finally stir in the remaining chocolate pieces.
Arrange 12 equal amounts of dough in baking trays, leaving plenty of space between them. Bake for 10 to 15 minutes; take out of the oven when they look glossy and the tops start to crack.
I have seen these cookies on Pinterest and I have been wanting to make them. They look delicious.
